Hi Ellen, according to Dr. Green at the Columbia Celiac Disease Center, gluten is difficult for most people to digest even if they don't have Celiac

Ellen, I go to a holistic Dr. and he said that most of our bodies whether we have celiac or not are not made for digesting gluten, which is why most people feel better without it.

Yes, Catherine there is much awareness regarding celiac disease in Italy. I was worried about taking a trip there but it was very celiac friendly. EVERY pharmacy had gluten-free products!

Have you tried gentle iron by Solgar? That doesn't bother my stomach. My iron levels were also low for a while.

Floradix does make a GF iron formula. I was on it for a while, but it was giving me diarrhea, so I switched to gentle iron.

Spinach has a lot of iron, but it's best to eat it with vitamin C foods so that it is absorbed better.

Do you think more endocrinologists are finally screening all their type 1 patients for celiac? European studies from 20 yrs ago were recommending it & almost all recent studies have shown that type 1s are almost always asymptomatic so it's easily missed.

our endo started testing the entire clinic about 6 years ago...Westin was one of the first 3 in the clinic to come back positive, with no symptoms. He was officially diagnosed a few years later.

There is a gluten free matzah made of GF oat from England. I purchase it from a kosher food market in Fair Lawn, NJ. It's expensive, $29.00 a box, but worth it, so I can grind it up into matzah meal and cook with it.
